image  Pasta with Pancetta, Parmesan & Herbs image

Simple, delicious & looks absolutely amazing, a cut away from the usual pasta sauces, it is great on its own or with a BBQ.

* 2 Thick slices of stale bread
* 1 Clove of garlic chopped up
* A little red chilli cut up dry or fresh (how spicy do you like it)
* 20g Butter
* 2 'Bacon thick' slices of pancetta cut into small pieces
* Dash of wine vinegar
* A slightly larger dash of wine
* 2 Sun dried Tomatoes cut up
* Extra virgin olive oil
* As much Parmesan as you want (80gms'ish) grated
* Salt & Black Pepper
* 250g Benedetto Cavalieri pasta (spaghetti, spaghettoni, penne)
* Chop masses of Parsley, Basil, Oregano, Thyme, Chives, Tarragon
* 1 Lemon

Put a pan(1) of water on to cook pasta
Crumble bread into rough crumbs(don't worry if there are a few larger bits)
Melt butter in a pan(2) & fry the breadcrumbs until golden, stir all the time!!
Put to air on a plate to the side, uncovered
Add pasta to water & watch the time(I always forget) & cook for the time stated on the packet.
Meanwhile place pan(2) back on the heat, add a little olive oil
When hot add the garlic & the chilli & fry
After 30 seconds add the pancetta & fry until it starts to brown & crisp
Add sun dried tomatoes
Flash pan with vinegar & wine & allow to nearly totally evaporate
Take pan off the heat
Drain pasta
Add pasta to the pan & stir in the herbs & breadcrumbs
Add parmesan & a little more olive oil
Taste & season with salt & pepper
Serve in large dish with lemon wedges to squeeze over

Baby spinach or chargrilled vegetables could be added.
