image  Port & Stilton Risotto with Sage & Thyme image

An ideal way to use up excess stilton and is delicious to eat on it's own or with cold cuts!

Half large onion, diced finely
1 & a half garlic cloves diced finely
1 tbspn olive oil
350-400g arborio rice
1 litre hot chicken stock
1 & a half glasses white wine
Quarter cup fresh grated parmesan
One wine glass Ruby Port (at least)
250g Colston Basset Stilton
1 bunch Sage
3 large sprigs fresh Thyme
100 ml double cream
Salt & Pepper

Heat oil in a heavy based saucepan. Add onions & cook until translucent. Add garlic and cook for 1 minute. Add rice and fry, stirring well for 1 & half minutes. Add wine & bring to boil. Add port & thyme then start to add stock, one ladle at a time until absorbed for 15-20 minutes - until rice is al dente. You may not need to add all the stock.
One minute before the end of cooking add stilton, parmesan & cream. Cook to allow the cheese to melt. Take off heat but continue to stir, finish with chopped sage, salt & pepper to taste -serve immediately.
NB.. it is vital that at all times through the cooking the pot is stirred to prevent sticking!!
