Manchego is a classic Spanish hard sheep’s milk cheese with a trademark outer rind. This version is aged for 6 months, so is a young, mild manchego and a superb table cheese. It is made from the thick aromatic unpasteurised milk of La Mancha sheep which reflects in its smooth rich flavour.
