Carleschi is all about crafting exceptional pasta that blends the best of Italian tradition with the finest British-grown organic grains. We’re proud to be the first British artisan producer of organic dry pasta, driven by our deep connection to Italian heritage and our commitment to sustainability, quality, and authenticity.

Britain offers an abundance of excellent grains, and it felt like a missed opportunity not to have British-made dry pasta. So, in 2012, we set out to change that and create one. It took us years refining our methods until we officially launched Carleschi at Borough Market in 2019. We have since kept expanding our range, regularly adding new shapes and grains.

But our story isn’t about one person—it’s the result of many hands. From the farmers who grow our grains to the millers who stone-grind them, and the artisans who craft each batch, Carleschi is a collective effort of passionate people creating the best British pasta possible.

Emmer (T. turgidum subsp. dicoccum). Domesticated emmer, known as farro in Italy, and shippon in Ancient Israel, was domesticated in the Southern Fertile Crescent and cultivated in ancient times throughout the Middle East and Old Europe. It was the only wheat used in ancient Egypt and was used to make the first matzah. Emmer is higher in crude protein than bread wheat but has low dough extensibility, emmer dough does not stretch and rise like bread wheat; for that reason emmer makes excellent pasta. Emmer wheat as an ancient wheat is rich in fiber, protein, minerals, carotenoids, antioxidant compounds, and vitamins, emmer is a complete protein source when combined with legumes, making emmer pasta ideal for vegetarians or for anyone simply wanting a plant-based high-quality protein source.
