Sustainable Fishing, Pure Ocean Flavour
In contrast to industrial overfishing, Santa Catarina follows a philosophy of quality over quantity. Our skipjack tuna is caught in the Atlantic Ocean surrounding the Azores using the traditional pole-and-line method—one man, one rod, one hook, one fish. This selective technique eliminates by-catch, is Dolphin Safe, and ensures a minimal impact on marine life. Every fish is hand-processed in our factory, preserving both the environment and the integrity of the tuna.
Handcrafted with Local Ingredients
Every step of the preparation—from filleting the tuna to peeling and chopping fresh ingredients—is done by hand. No preservatives, emulsifiers, sweeteners, or additives are used. Just high-quality ingredients, often sourced from the island’s own fajãs (fertile coastal plains), including milk, peppers, garlic, parsley, and red pepper paste. The result is a truly handmade product that reflects the care and tradition of São Jorge’s people.
Empowering a Community
On an island of just 8,000 inhabitants, Santa Catarina plays a vital social role by employing 120 women in meaningful, skilled work. These women carry out the artisanal canning process on land: washing, cooking, cleaning, filleting, and preparing the tuna with exceptional attention to detail. It’s more than a job—it’s a continuation of a cultural legacy, passed down through generations.

From rich ventresca (belly) fillets to flavourful steaks and chunks, Santa Catarina’s tuna is offered in a variety of forms: in organic olive oil, brine, vegetable oil, or tomato sauce. Each tin is attractively packaged and filled with tuna of unmatched flavour, delicate texture, and natural pink hue.
Available in classic organic olive oil or infused with aromatic fennel, our tuna is ideal for refined dishes—from an elevated Salade Niçoise to a simple plate with fresh tomato, salad leaves, and shallots.
